Protein Pancakes

 
 

Yield: 2 Medium Pancakes Prep Time: 5 minutes Total Time: 15 minutes

Ingredients

  • 120 g (½ Cup) Greek Yogurt

  • 36 g (½ Cup or 1 Scoop) Whey Protein Powder

  • 2 Large Eggs

  • 1 tsp Baking Powder

  • 60 g (¼ Cup + 2 Tbsp) Whole Wheat Flour or 1-to-1 Gluten Free Flour

  • [Optional for extra flavor] 1 tsp Vanilla Extract

Recipe

  1. In a bowl, mix together all of the ingredients until no lumps remain and the batter is smooth.

  2. Place a skillet over medium-high heat.

  3. Grease the pan with butter or oil. Pour half of the batter into the pan.

  4. Using a spatula flip the pancake over once bubbles start to come to the surface and pop.

    Laila’s Tip: If doing the trending Scrambled Pancake — Start to scramble it 10 seconds after pouring it onto the pan. Keep moving it around the pan just like scrambling eggs. Take off any smaller bits first and make sure any larger pieces are fully cooked.

  5. Let fully cook for another minute then remove from the pan. Do this again with the remaining batter.

  6. Top with agave syrup and enjoy!
