Brazilian Brigadeiros

 
 

Yield: 16 Truffles Prep Time: 5 minutes Total Time: 30 minutes

Ingredients

  • 397 g (14 oz) Sweetened Condensed Milk

  • 3 Tbsp Unsweetened Cocoa Powder

  • 15 g (1 Tbsp) Unsalted Butter + A little extra for greasing your hands

  • ⅛ tsp Kosher Salt

  • Chocolate Sprinkles or Preferred Coating (Nuts, Cinnamon + Cayenne, Freeze-dried Fruits)

Recipe

  1. Lay out a silicone mat on a working surface OR prepare a plate by coating it in butter. Prepare the sprinkles (or preferred coating) by pouring it out evenly onto a plate. Set aside.

  2. Combine all of the ingredients in a medium saucepan.

  3. Set over medium heat and stir constantly with a rubber spatula or non-stick utensil. The mixture should thicken and start to become a dough-like texture. Remove it from the heat once you can run a rubber spatula through it and it leaves a clear streak on the bottom of the pan.

  4. Pour the mixture onto the silicone mat or buttered plate. Let sit until it is cool enough to touch (it should still be warm when moving onto the next part).

    Laila’s Note: While the mixture cools it will start to form more into a dough texture and look like a very soft fudge.

  5. Cover your hands with butter and tear off about a tablespoon of the dough. Using your hands roll it into a ball.

  6. Place the ball onto the sprinkles plate and roll it in the sprinkles so that the entire surface is coated. Place into a candy liner or on a piece of parchment paper.

  7. Continue to do steps 5 and 6 until all of the dough is used.

    Serving: Best served chilled.

    Storage: Store in a sealed container in the fridge for up to a week.
