Biscoff Banana Muffin

Ingredients
Streusel
70 g (½ Cup) All-Purpose Flour
1 tsp Ground Cinnamon
40 g (¼ Cup or 2 Tbsp) Light Brown Sugar
56 g (¼ Cup or 4 Tbsp) Unsalted Butter, Cold
50 g (½ Cup or about 8 cookies) Biscoff Cookies, Crumbled
½ tsp Kosher Salt
Muffin
240 g All-Purpose Flour
½ tsp Baking Soda
2 tsp Baking Powder
½ tsp Kosher Salt
1 tsp Ground Cinnamon
100 g (½ Cup) Light Brown Sugar
1 Large Egg
56 g (¼ Cup or 4 Tbsp) Unsalted Butter, Melted
130 g (½ Cup) Whole Milk
1 tsp Vanilla Extract
2 Ripe Bananas, Mashed
100 g (about ¼ Jar) Biscoff Spread, Chilled

Streusel
In a small bowl, mix together all of the streusel ingredients. Set aside.
Laila’s Tip: It’s easier to combine these ingredients with your fingertips similar to a pie dough. This prevents the butter from melting (compared to using your whole hand) while still getting a crumbly texture.
Muffin
Preheat the oven to 200°C (400°F) and line a muffin pan with cupcake liners.
Fill a piping bag fitted with a small round tip (12 Wilton, 7mm/0.25in ) with Biscoff spread and set in the fridge.
In a large bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon until combined. Set aside.
In another bowl, whisk together the sugar, egg, butter, milk, and vanilla until pale and airy.
Add the mashed bananas into the wet ingredients and mix again until well combined.
Create a well in the center of the dry ingredients bowl. Pour the wet ingredients into the well. Gently fold everything together with a spatula until just combined. (Be careful not to over mix! This batter should be lumpy.)
Divide the batter evenly into the muffin tins, filling it up to about 3mm (⅛ in) away from the top of the liner.
Take the piping bag of Biscoff spread out of the fridge. Pipe a swirl of spread into each muffin. Use a toothpick to swirl it around more if desired.
Sprinkle over a tablespoon of streusel on top of each muffin.
Bake the muffins for 15-17 minutes or until the center of the muffin bounces back when poking it.
