Grandma’s Tres Leches Cake

 
 

Yield: 12 Slices Prep Time: 20 minutes Total Time: 30 minutes

Ingredients

The Cake

  • 225 g (1½ Cups) All-Purpose Flour

  • 1½ tsp Baking Powder

  • 1 tsp Kosher Salt

  • 3 Large Eggs

  • 150 g (¾ Cup) Granulated Sugar

  • 2 tsp Vanilla Extract

  • 70 g (⅓ Cup or 80ml) Vegetable Oil (Canola and Rapeseed work as well)

  • 180 g (¾ Cup or 1.8dl) Whole Milk

The Soak

  • 1 can (14oz, 397g, or 4.1dl) Sweetened Condensed Milk

  • 1 can (12oz, 340g, or 3.5dl) Evaporated Milk

  • 9.5 dl (4 Cups or 940g) Half and Half

  • 1.2 dl (4oz or 113g) Cream Cheese

  • 1 Batch of Whipped Cream

  • Optional Toppings: Berries, Cinnamon, Chocolate Syrup

Recipe

The Cake

  1. Preheat the oven to 177°C (350°F) and line a 33x23x5cm (13”x9”x2”) cake pan with parchment paper. 

  2. In a large bowl, whisk the flour, baking powder, and salt together. Set aside.

  3. In a mixer bowl fitted with a whisk attachment, beat the eggs and sugar together on medium-high speed until it reaches a ribbon stage and looks pale yellow.

    Laila’s Tip: It’s at a ribbon stage once you lift the whisk from the batter, draw a figure 8, and the ribbon of batter stays suspended for a moment before combining back into the rest of the batter.

  4. Lower the speed and slowly stream in the oil, milk, and vanilla until everything is fully incorporated then stop mixing.

  5. Fold in the dry ingredients with a spatula until no dry spots remain.

  6. Fill the lined pan with the cake batter and bake for 20 minutes or until the middle does not jiggle and a toothpick comes out clean.

  7. Chill cake completely before soaking.

The Soak

  1. In a large bowl, whisk all of the soaking ingredients together until completely incorporated and no cream cheese lumps remain. Set aside.

  2. Set the cake on your working surface. Cut the crusts off of the cake then cut the cake into squares. 

    Grandma’s Tip: The crusts on the cake act as a barrier and don’t allow the cake to absorb the milk as well.

  3. Place a cake square in the microwave for 20 seconds. Using tongs, grab the cake and completely submerge it into the soaking mixture for no more than 10 seconds or it will disintegrate. 

    Grandma’s Tip: Only microwave and prepare the cake slices you plan on eating or serving. You can store the rest of the slices in the fridge then microwave and prepare once needed.

  4. Top with whipped cream, decorate, and serve.
